江戸時代から続く紀州備長炭。紀州の山地には、その材料となるウバメガシが多く、高温で蒸焼きをして質の高い炭となる。
最近はこの伝統を受け継ぐ若い炭焼き職人も増えてきているとか。

The mountains here are rich in the species of oak used, and it is fired at high temperatures in a kiln to produce this highest quality charcoal.
Recently the number of younger producers has been increasing.
